This set comprises 6 cheese knives: 2 designed for hard cheeses, 2 for medium-hard cheeses, and 2 for soft cheeses. Each knife is crafted with precision to cater to the specific demands of various cheese types.
The production process begins with precise waterjet cutting to create the desired shapes. Subsequently, every knife undergoes meticulous hand-finishing, culminating in a unique step – they are gently blasted with a stainless steel bowl to achieve a semi-matte surface, adding an elegant touch to their design. To ensure their functionality, two of the knives designed for harder cheeses are sharpened by a local knife sharpener, providing the perfect finishing touch.

Why a cheese knife at all? The consistency of cheese presents unique challenges to traditional kitchen knives. Cheese tends to have a smooth texture, which causes it to adhere to regular blades. A dedicated cheese knife features varying-sized notches designed to prevent the cheese from sticking, resulting in a clean, even cut.

- Cheese knives for hard cheese: Think Parmesan, cheddar, or Emmental. Cutting these requires extra effort, and that’s where a specialist hard cheese knife shines. These knives boast a wider blade and an ergonomic handle, ensuring efficient cutting with minimal exertion.
- Cheese knives for soft cheese: Soft cheese varieties like gorgonzola, cream cheese, or camembert require delicate handling. Ordinary utility or chef’s knives may deform these cheeses during slicing. Our collection includes knives with slender, notched blades specially designed for creamy cheeses. This inaugural edition of unique cheese and butter knives is crafted from repurposed and B-choice fish and table knives sourced from my OUTLINE series. I’m always on the lookout for resourceful ways to give a second life to items that might have otherwise been set aside due to minor production imperfections in my tableware collection. It’s about making the most of these materials and embracing a more eco-friendly approach to design.
